I never lost a bean cook-off with this recipe and I have been to a lot of cook-offs in my time and some of that was right here in Jacksboro, USA. I use black beans and came in first place. A friend of mine used the same recipe with pinto beans, came in second place. It is cheap, easy and goes with BBQ beef or pork, I like the pork myself. I never use the last three items in competition¸ but I do like the yellow rice and sour cream. Black bean and yellow rice 1 lg onion chopped 1 med green pepper chopped 2 cloves garlic minced ½ cup olive oil 3 (15 oz cans) black beans, drained 1 (14.5 oz) can Cajun style stewed tomatoes, undrained and chopped 1 ½ cups water 1 tbsp red wine vinegar 1 tsp sugar 1 tsp pepper ½ tsp salt 1 (8 oz) cans tomato sauce Hot cooked yellow rice 1 ½ cup chopped onions Sour cream Cook first 3 ingredients in hot oil in a Dutch oven until veggies are tender add beans and next 7 ingredients. Bring to boil. Cover, reduce heat and simmer one hour. Uncover and simmer 30 minutes. Serve over rice and top with green onions and a dollop of sour cream.
